Veggie spring rolls

Fresh and delicious Rice paper wrapped spring rolls.

  1. Clean and cut chosen veggies into think strips
  2. If you want to make a slightly in healthier version you can make up some tempura batter and heat oil ready to fry them. (Sweet potato and baby corn work well)
  3. Batter and fry veggies now if you've decided to include them in your rolls
  4. Fill a shallow dish with hot water. You'll use this
  5. Take one rice paper, let it soften for 20-30 seconds in the hot water, gently remove from the water letting excess water drain off and put on your clean chopping board.
  6. Take a small selection of your fillings abs lay them across the rice paper at one end of the paper.
  7. Start rolling up the paper, fold both sides in and continue to roll to form a spring roll shape. Continue to fill as many as you wish, have fun mixing up the ingredients!

    I should add that you use as many rice papers as you wish and you can serve with your choice of dipping sauce; soy sauce, tamari, sweet chilli etc
