Garlic roasted potatoes, with Pan fried asparagus, cherry tomatoes, red onions and mangetout is a simple but really tasty meal.

You don’t really have to have any cooking skills to whip it up, yet it makes an impressive , tasty spread.

Ingredients:

10 whole King Edward Potatoes
16 Asparagus Spears
250 grams Cherry Tomatoes
4 Large Red Onions
300 grams Mangetout
3 Whole Garlic Cloves
Salt and pepper to taste

Method:

-*Leave the Skin on the potatoes. Chop the potatoes in approx 1 inch chunks, and place in boiling water to par boil. DO NOT OVERCOOK THEM  or they will fall apart.
-Once they have softened somewhat, drain them toss in an oven tray with olive oil and crushed garlic. Add the sliced red onions segments, season with salt and pepper, and place in oven at 180c .
-When the potatoes look about 10 mins off being ready, trim the ends off the Asparagus , and brush a cast iron pan with  olive oil lightly.
-Add the Aparagus to the hot pan, season with salt and pepper and add a teaspoon of water to add some steam as it cooks.
-Add the Asparagus to the hot pan, season with salt and pepper and add a teaspoon of water to add some steam as it cooks.
-Add the cherry tomatoes to the pan.
-Once the asparagus and cherry tomatoes are almost ready, add the mangetout and cook lightly.
-Serve the meal up, and its that easy!

      Thanks Simone! It's such a quick meal idea, but I don't want to just include difficult to cook or fussy foods, as some people might just be looking for a simple idea for an evenings meal, or to cook for a friend, and I remember when I first became Vegan, sometimes easy meal ideas weren't obvious, as I had spent my whole life working out meals focused on animal foods, so had to think outside of the box!
