Delicious cake than just happens to be gluten free. Veganised from a Great British Bake-Off recipe from a couple of years ago, this cake has a real zing and a light crumb and it’s very hard to stop at just one piece!

Can't wait =) Does gluten free flours make cakes softer and spongier? Does it taste different ? Sorry im just a novice =(

I would say the texture of the cake is more like a Friand cake than a sponge cake.
This cake is drenched in a Lime and Passionfruit syrup after cooking so it is lovely and moist.
Gluten free cakes often have a less rubbery texture than those made with wheat flour, as they don;t have the gluten that gives it the bounce.
Sometimes Gluten free flour tastes different.
One brand we bought from the shops was so awful we threw it out, whilst others are nice, and due to the fact this is drenched with a tangy syrup, it is well flavoured, so you won't probably notice much different!
