- Mixed Beans
- 200 gram
- butter beans
- 1 small
- Carrot
- 3 inch chunk
- Cucumber
- 3 Portion
- Baby corn (fresh)
- 1/2 medium
- Avocado
- 1/2 medium
- Red bell pepper
- 1/2 medium
- Yellow bell pepper
- 3 whole
- Mushrooms
- 2 whole
- Spring onions
- 1/2 whole
- juice of 1/2 lemon
- 1 Sprinkle
- Garlic and Chilli grinder
Some times, you just want something simple, simple but good!
This is one of my favourite meals to make when I want something filling, but completely healthy, and I can’t be bothered to cook.
It’s packed full of nutrients and super tasty.
It can be eaten either as a main meal, or as a side.
You can adapt flavours and spices to suit your palate as well…
Add a splash or lime juice instead, or mix in some roasted veg to mix it up.
I don’t add any added fats like oil, as you don’t need it, and why wreck a completely healthy dish by putting oil in it?
It will keep ,if you don’t eat all of it, and be fine the next day.

Tex – Mex Bean salad
Ingredients:
1 400gm can Mixed beans drained
1 200gm can Butter beans (lima or white beans) drained (reserve liquid for another recipe)
1 small carrot diced
3 inch chunk of cucumber diced
3 baby corn diced OR fresh corn cut off the cob raw
1/2 avocado diced
1/2 red pepper diced
1/2 yellow pepper diced
3 mushrooms diced
2 spring onions sliced (not the type with the big bulb on it)
Juice of 1/2 lemon
seasonings :
Harissa, Sumac, garlic and chilli grinder, pepper etc.
- So simple, you barely need instructions! :) Add one 400 gm tin of mixed beans,one 200 gm tin of Butter beans (make sure you save the liquid Aquafaba to use for another recipe! ) chop all your veg and toss together. Add the juice of 1/2 a lemon, and season with harissa seasoning, garlic and chilli seasoning etc...
