How often has someone said to you, “I’d love to have you over for a meal, but I just don’t know what on earth I’d cook you!”…Well, instead of the eye roll or groan inside we’d normally do, tell them to come to Plantified™ and pick a meal, any meal and make it, instead of making excuses!

These Lemon Meringue Pie cupcakes make a nice change from the fully loaded buttercream topped cupcakes. I threw these together for my son's 3rd birthday party and they were an absolute hit! They have a soft marshmallowy top ,and a lemon curd filled centre with a vanilla cake. You can change the filling to a different flavour and even flavour the marshmallow differently to create your own custom cakes... Just use this base recipe and customise to your taste buds! Whilst the marshmallow is still fresh, you can add sprinkles or toppings... These Lemon Meringue Pie cupcakes have had some sprinkled in toasted coconut and i have toasted the tops of others.
These Lemon Meringue Pie cupcakes make a nice change from the fully loaded buttercream topped cupcakes.

I have some great marshmallow recipes, and allsorts to share too, so you no longer have to pay big bucks for expensive tiny bags of things from specialist suppliers!
My kids always missed out on a toasted marshmallow around the campfire, as we just couldn’t get them, so I came up with my own recipe for it, and now they can have all the marshmallows they want, and so can you!!!

Vegan MARSHMALLOWS!!!!After much experimenting, i developed a recipe for vegan MARSHMALLOW using aquafaba!I am really proud of this recipe as it tastes great and is so versatile and means no more expensive shop bought marshmallow EVER!!! Hooray!!!You can toast this, melt it, pipe it, use it in slices, biscuits and on cupcakes, or just roll it in toasted marshmallow- my favourite!!!I hope you find all sorts of ways to enjoy this as much as i have!

    Wonderful idea Katrina. I am not a baker but I love to cook. I love simple everyday food, which I cook at least three times a week. Mostly Indian food. If you like India food, I'll share my recipes here. Btw, I am a fan of your baking skills.

      Thanks Meghan! Yes, I love Indian food, but it's not something I make often! I think EVERYONE loves Indian food infact! We would all love you to post your recipes up! Having all sorts of recipes will inspire people to try them! I can't wait to see the first! Just a tip to write your recipe in another program before submitting it, as I have lost a recipe before when something went wrong. At least if it's saved elsewhere, it can be cut and pasted back in!

      Hi Laurena! It's great to have you on here! Your blog is great! I will have to try out those fruit leathers for the kids :) We'd love to see some of your delicious recipes on here! I tend to cook some of the more naughty treats, so some guilt free foods are always welcome!

Your innovative tips and recipes have given us a lot of food for thought. We are very passionate about vegan food and healthy lifestyles and you are definitely the yin to our yang (but we love it!). We offer lots of plant-based recipes with other dietary considerations on our blog (more everyday meals than sweets), but we’d be more than happy to share some recipes (or articles) on here too.     This site had me at ‘Fair Dinkum Aussie Pavlova’. I am yet to try it but have made an aqufaba meringue before so I can’t wait to try this ‘proper’ pav version. Thank you so much for this wonderful site :)

      If you need any help trying to find the Gellan Gum in your country, let me know! Make sure it is the right type- High Acyl. You can also split the mix and make two smaller ones (as this one is BIG!!!)
